  • For crust
  • 1 c flour
  • 1/8 t salt
  • 1/2 c confectioners sugar
  • 1 stick butter, melted but not hot
  • for filling
  • 2 large eggs
  • 3/4 c sugar
  • 1 1/2 T flour
  • 6 T juice from two lemons
  • 2 t finely grated lemon zest



Step 1

mix flour, salt, confectioners sugar in a med bowl. stir in butter to form a dough. Press dough into a sprayed 8x8" pan. Bake until pale golden brown for about 20 min.

while pastry is baking, whisk eggs,sugar, flour, lemon juice,and zest in a med bowl.

Remove pan from oven. Add lemon mixture and continue to bake until set, about 20 min. longer. Let cool in pan for a few minutes, ten using foil handles pull bars from pan and set on wire rack. Cool until room temp. Cut into squares and enjoy
