Lobster Mac and Cheese

Ingredients

  • Kosher salt
  • Vegetable oil
  • 1 lb cavatappi or mezze penne pasta
  • 1 qt milk
  • 1 stick butter, divided
  • 1/2 cup flour
  • 12 oz gruyere cheese, grated
  • 8 oz sharp cheddar cheese grated
  • 1/2 tsp pepper
  • 1/2 tsp nutmeg
  • 1 1/2 lbs lobster(or crawfish,shrimp)
  • 1 1/2 cups white bread crumbs

Preparation

Step 1

Drizzle oil into pot of boiling salted water. Add pasta and cook according to directions, then drain.

Heat milk in a saucepan, melt 6 tbls butter and add flour. Cook over low heat for 2 minutes, stirring with a whisk. While whisking, add hot milk and cook for 1 or 2 more minutes until thick and smooth. Add gruyere, cheddar, salt, pepper and nutmeg. Add cooked macaroni and seafood. Stir well.

Place in grease 13x9 dish. Melt 2 tbls butter, combine with bread crumbs and sprinkle over entire dish.

Bake for 30-35 minutes at 375.
