Hearty Banana Oat Flapjacks

Ingredients
- 2 large ripe bananas, peeled and sliced
- 1 tbsp. granulated sugar
- 1 cup all-purpose flour
- 1/2 cup quick or old-fashioned rolled oats, uncooked
- 1 tbsp. baking powder
- 1/4 tsp. ground cinnamon
- 1/4 tsp. salt
- 1 cup skim milk
- 1 egg lightly beaten
- 2 tbsp. vegetable oil
- Maple syrup
- Banana slices (optional)
- coarsely chopped walnuts (optional)

Preparation
Step 1
1.Stir banana slices and sugar in medium bowl until coated; set aside.
2. Combine flour, oats, baking powder, cinnamon and salt in a large bowl; mix well. Combine milk, egg and oil in a medium bowl; blend well. Add to dry ingredients; mix just until dry ingredients are moistened. (Do not overmix.)
3. Heat griddle over medium-high heat. Lightly grease. For each pancake, pour 1/4 cup batter onto hot griddle. Top with banana slices. Turn pancakes when the tops are covered with bubbles and edges look cooked. Serve with syrup, banana slices and nuts.
