Ingredients
- 1 cup (2 sticks) unsalted butter, room temperature
- 1 cup (packed) light brown sugar
- 6 large eggs
- 2 cups all-purpose flour
- 2 tsp. baking powder
- 1/4 tsp. ground nutmeg
- Pinch of salt
- 3 ripe bananas, mashed
- 1 tsp. pure vanilla extract

Preparation
Step 1
1. Preheat oven to 350 degrees F. Butter and lightly flour a 9x5 inch loaf pan.
2. Cream the butter and brown sugar in a large bowl with an electric mixer. Add the eggs one by one, beating well after each addition.
3. Combine the dry ingredients in a small bowl and add to the butter mixture, a little at a time, beating well after each addition.
4. Add the bananas and vanilla and mix to combine.
5. Pour the batter into the prepared pan. Bake until a skewer inserted in the center comes out clean, about 1 1/2 hours.
6. Cool the loaf in the pan for 10 minutes and then turn it out onto a rack to cool completely.
