Lemon Almond Cookies

This is a famous recipe in the family from the days of the Nyack Mother-Daughter Tea.

Ingredients
- 1/2 cup almonds, unskinned
- 1/2 cup sugar
- 1/2 tsp Unsalted butter
- 1 tsp Vanilla Extract
- Grated peel of 1/2 lemon
- 1 Egg
- 2/3 cup whole wheat flour, or all purpose flour
- 1/4 tsp ginger

Preparation
Step 1
1. Spread almonds in a baking pan. Toast in a 350° oven 10 minutes, stirring several times.
2. Remove from oven. Cool and grind to a powder. Be very careful not to grind almonds too long or almonds will turn to almond butter.
3. Cream sugar and butter. Add vanilla and lemon peel. Beat in egg white.
4. Combine flour, ginger and almonds. Mix into batter. Beat until smooth.
5. Drop from a teaspoon onto an ungreased cookie sheet, about 1-inch apart.
6. Bake at 375° approximately 10 minutes or until brown around the edges.
