STRAWBERRY CREAM CHEESE PASTRIES

Ingredients

  • 1 sheet ( 8 oz package) puff pastry, thawed
  • 3 oz (100g) cream cheese, room temperature 3 tbsp (45g) sugar
  • 10 oz (300g) fresh strawberries, cut into slices 1 tsp (5g) vanilla extract
  • 1 small egg, beaten, for brushing
  • Powdered sugar, for serving (optional)

Preparation

Step 1

Preheat the oven to 400F (200C). Line a baking sheet with parchment paper.

In a small bowl, beat the cream cheese until smooth. Add sugar and vanilla and mix until well combined.

Cut the sheet of puff pastry into 6 rectangles. Use a fork to prick the centers of the rectangles, leaving 1⁄2 inch border unpriked around the edges.

Brush the edges with beaten egg. Spread cream cheese mixture into the center of rectangles and arrange strawberry slices on top.

Bake for 15-­18 minutes until golden brown.

Cool completely to a wire rack. Dust with powdered sugar before serving if desired.
