  • tsp extra virgin olive oil, divided, plus more for greasing pan

  • tbsp. finely chopped garlic cloves

  • cup chopped fresh flat leaf parsley

    roma tomatoes, seeded and chopped

  • cup reduced fat feta, crumbled

    (5-6oz) tilapia fillets, deboned

    tsp kosher salt

    tsp black pepper


preheat oven to 400 degrees. very lightly coat the bottom of a 7x11inch ovenproof baking dish with olive oil. in a medium bowl, combine 1 tsp olive oil, garlic, parsley, tomatoes and feta. set aside. lightly coat both sides of the tilapia with remaining 1/4 tsp olive oil . season both sides with salt and pepper. place the fillets side by side, barely touching, in the prepared baking dish. top fish evenly with the reserved tomato mixture. bake in the oven for 13 to 17 mins, or until the fillets gently flake and are no longer translucent and feta has slightly browned. serve immediately.
