This is a great crockpot meal. Easy and delish. A winner for adults and kids alike.

Ingredients

  • garnish:
  • 5 russet potatoes, peeled and cut in 1 inch cubes
  • 4 cups chicken broth
  • 1 bottle dark beer
  • 1 medium onion, chopped
  • 4-5 garlic, minced
  • 1 tbls salt and pepper
  • 6 tbls butter
  • 1/3 cup flour
  • 2 cups cream
  • 1/2 cup sour cream
  • bacon
  • cheese
  • green onions
  • tomatoes
  • sour cream
  • anything else you like on your baked potato

Preparation

Step 1

Put first 6 ingredients in crockpot. Cook on low for 6-8 hours or high for 4-5 hours. Make roux. (I have even done this ahead of time on nights that I will be working late. I leave it out, by the crockpot, with directions and viola, dinner is ready as soon as I'm home.) Melt butter in skillet. Add flour and cook while stirring for 1 minute. Add cream and sour cream. Stir with whisk to work out any lumps and continue until thickened, about 5 minutes. Mix roux into crockpot mixture and cook on low for additional 30 minutes. Serve with garnishes of choice.
