Ingredients
- 2 cups all purpose flour
- 3 eggs
- 2 tsp. cinnamon
- 2/3 cup milk
- 1 tsp. baking powder
- 3 medium carrots, grated
- 1/4 tsp. salt
- 1/2 cup chopped nuts
- 2/3 cup butter softened
- 1 cup sugar
- Icing
- 1/2 cup butter, softened
- 4 oz. cream cheese
- 1 tsp. vanilla
- 2 1/2 cups confectioners sugar
- Topping
- 1/4 cup finely chopped nuts
- 2 Tbsp. firmly packed light brown sugar

Preparation
Step 1
Mix together flour, cinnamon, baking powder and salt. Beat together butter and sugar until light and fluffy. Add eggs, one at a time beating well after each addition. At low speed alternately beat flour mixture and milk into butter mixture. Stir in carrots and nuts. Pour batter into greased 9 inch round cake pan dusted with flour. Bake at 350° for approximately 40 minutes. Transfer to rack and cool. Prepare icing by beating together butter and cream cheese. Beat in vanilla then sugar. Beat until well blended. Ice cake and sprinkle with topping.
