Sweet and Sour Cabbage

Ingredients
- 1 Red cabbage (4-1/2 to 5 lbs.)
- 1/2 cup butter
- Salt and freshly ground pepper to taste
- 1 teaspoon or more grated nutmeg
- 3 tablespoons white vinegar
- 3 tablespoons or more brown sugar
- 1 cup raisins
- 2 cooking apples peeled, cored and cut into small pieces (about 2 cups)

Step 1
1. Preheat the oven to 400 degrees.
2. Cut away and discard the core of the cabbage. Shred the cabbage finely.
3. Heat butter in large heavy casserole and add the cabbage. Sprinkle with salt and pepper to taste and nutmeg. Add the vinegar, brown sugar, raisin and diced apples. Do not add any more liquid. Cover and bring to a boil and cook about ten minutes stirring once in a while. Place in the oven and bake covered one and one half hours stirring occasionally.
4. If desired add more nutmeg and brown sugar to taste.
Note: Nutmeg is a natural complement to this dish.
