Festive Scallloped Potatoes

Ingredients

  • Sauce:
  • 8 medium potatoes, thinly sliced
  • 1 medium red onion, thinly sliced in rings
  • 1/2 C butter
  • 1/2 C flour
  • 2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp paprika
  • 4 1/2 C milk

Preparation

Step 1

Place potato slices in 1 container and onion slices in another.

Sauce: Melt butter in saucepan. Mix in flour, salt, pepper and paprika. Stir in milk until it boils and thickens. To assemble, layer 1/2 potatoes, then 1/2 onion in greased 3L casserole. Place 1/2 sauce over top. Layer sercond 1/2 potatoes and onion followed by second 1/2 sauce.

Sprinkle with paprika. Bake, covered in 350 oven for about 1 hour until tender. Remove cover for last 10 minutes.
