Ingredients

  • 1 C flour
  • 1/2 C whole wheat flour
  • 3 T sugar
  • 1 tsp baking soda
  • 1/4 tsp each nutmeg and salt
  • 1 C plain yogurt
  • 3/4 C milk
  • 2 T butter, melted
  • 2 eggs
  • 1 1/4 C finely chopped peeled peaches

Step 1

In large bowl, stir together flours, sugar, baking soda, nutmeg and salt. Whisk yogurt, milk, and eggs; pour over dry ingredients and stir just until moistened.

Heat skillet over medium heat; brush with oil. Using 1/4 C batter for each pancake, pour into skillet, sprinkle 1 T peaches over each. Cook for about 2 minutes or until bottom is golden and bubbles break on top but do not fill in. Turn and cook for about 2 minutes or until bottom is golden.
