Got this recipe from my mom... nice and oatmealy... and the centre cooks up like a custard.. For a change - you can add some strawberries into the 4 cups of rhubard

Ingredients

  • CRUST
  • 1 cup brown sugar
  • 1 cup flour
  • 3/4 cup oats
  • 1/2 cup butter
  • FILLING
  • 4 cups rhubarb
  • 1 cup white sugar
  • 1 tbsp corn starch
  • 1 cup water
  • 1 tsp vanilla

Preparation

Step 1

CRUST

Mix together till crumbly. Put 1/2 of crust mixture into a 13" x 9" pan.

FILLING

Cook till thickened

Pour filling over crust. Top remaining crust over filling. Bake at 375 for 45 minutes
