CARROT CAKE

Peter’s co-worker and our friend Eleanor, gave me this recipe. She made the BEST carrot cake.

Ingredients

  • 1 1/2 Cups vegetable oil
  • 1 Cups sugar
  • 4 Eggs
  • 2 Cups flour
  • 2 1/2 Tsp. vanilla
  • 2 Tsp. Baking soda
  • 3 Cups grated carrots
  • 1 Tsp. salt
  • 2 1/2 Tsp. Cinnamon

Preparation

Step 1

In a large bowl, combine oil, sugar and eggs - beat well. Sift together dry ingredients. Add flour mixture to sugar mixture gradually. Beat two minutes. Add vanilla and carrots. Blend well.

Bake at 350 degrees for 45 minutes in greased and floured cake pans.

CREAM CHEESE FROSTING
Allow ¼ lb. butter and one 8 oz. pkg. cream cheese to soften. Beat together in bowl until blended. Add one 16 oz. pkg. of powdered sugar and 1 Tbs. vanilla. Beat until well blended.
