Elbows with Fresh Spinach

Ingredients
- 8 oz. elbow macaroni
- 2 T. extra virgin olive oil
- 2 minced garlic cloves
- 1/4 t. pepper
- 10 oz fresh spinach
- 4 oz. cherry tomatoes
- 1/4 c. parmesan cheese

Preparation
Step 1
1. Prepare pasta.
2. In a large skillet, saute garlic in oil for 3 minutes. Coarsely chop the spinach and place in pan. Cook until wilted (about 7 minutes), stirring occassionally.
3. Toss spinach with tomatoes and pasta. Sprinkle with parmesan cheese.
