Ingredients

  • 2 1/4 cups Flour
  • 1 1/4 cups Sugar
  • 1 1/2 cups Bananas, well-mashed and ripe (3-4)
  • 1/2 cup Shortening
  • 2 Eggs
  • 2 1/2 teaspoons Baking Powder
  • 1 teaspoon Vanilla
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt

Step 1

Pre-heat oven to 375-degrees. Grease and flour a bundt pan. Into a large bowl, measure all ingredients. With mixer at Low speed, beat until well mixed, constantly scraping the bowl with a rubber spatula. Beat on High speed for 5 minutes, occasionally scraping the bowl. Pour batter into the pan and bake 25 minutes or until a toothpick inserted in the center comes out clean. Cool in pan on wire rack for 10 minutes; remove from pan and cool on rack. Makes 1 large or 2 medium loaves if you don't want a bundt.
