Rosemary & Apple Dressing - Gluten Free

Ingredients

  • 1/4 cup olive oil
  • 2 onions, diced
  • 3 Granny Smith apples, diced
  • 3 cloves garlic, minced
  • 1/3 cup dried cranberries
  • 1/2 575g loaf bread - gluten free
  • 2 sprigs rosemary - chopped
  • 3/4 cup chicken stock
  • 1/4 cup brandy
  • 1 bay leaf

Preparation

Step 1

1. Heat oil on med-high in large skillet. Sautee onions until soft.

2. Add apples, garlic, cranberries and rosemary. Cook until apples begin to soften. Stir in stock and brandy. Add bay leaf. Bring to boil. Stir in bread until moistened. Remove from heat. Stir in salt and pepper.

3. Place in foil, lightly greased. Bake 45 minutes at 325 degrees. Remove bay leaf before serving.

If using casserole dish to bake, add an extra 1/4 cup chicken stock to recipe.
