Cheesy Mashed Potatoes

Ingredients
- 2-2 1/4 lb baby Yukon Gold potatoes
- 1/4 cup sour cream
- 2 cups shredded cheddar cheese
- 3 TB chives
- salt and pepper
Details
Preparation
Step 1
1. Cut potatoes in 1/2. Place in pot. Cover with water and bring to a boil.
2. When water boils, add 2 big pinches of salt and boil for 10 minutes or until potatoes are tender.
3. Drain and return to pot. Mash potatoes and combine with sour cream and cheese.
4. Once cheese melts, add chives, salt, pepper and mash again.
