Stuffed Chicken Thighs

Ingredients
- 8 boneless, skinless chicken thighs
- 1/4 c mayonnaise
- 1/2 c crumbled feta
- 1/4 c parmesan
- 2 c chopped fresh spinach
- 2 cloves garlic, chopped
- 2 tbsp sundried tomatoes, chopped
- 1 egg
- 8 slices maple bacon

Preparation
Step 1
In a medium bowl mix together all ingredients except chicken and bacon. Set aside.
Open up thighs and spoon spinach mixture onto each one. Fold chicken over stuffing and wrap with bacon.
Secure with toothpicks if necessary.
Place bundles on a rimmed cookie sheet.
Bake at 375F for 40 minutes or until chicken is no longer pink. Then broil for 5 minutes to crisp up bacon, if desired.
This can also be made with butterflied chicken breasts, but you may need two pieces of bacon for each bundle.
You may also need to adjust the cooking time, being careful not to dry out the chicken.
