Ingredients
- Salsa:
- 2 Chicken breasts
- 6 Bacon slices
- 1 1/2 Plum tomatoes, peeled, seeded, chopped
- 1 Green onion, sliced
- 1/2 Jalapeno pepper, seeded & thinly sliced
- 1 Garlic clove
- 1/2 Lime zest
- 1 T Cilantro, fresh, minced

Step 1
Preheat oven to 400F degrees. Combine all salsa ingredients in a bowl & mix well.
Butterfly chicken & flatten. Fill each with salsa mix & close them up.
Roll the bacon strips around each breast & pin them in place with toothpicks.
Place chicken in baking pan & bake for 30-35 mins or until thermometer reads 170F degrees.
then broil for 5-6 mins until bacon is crisp.
Serve with salsa.
