Ingredients
- 1 bag of baby spinach
- 8 oz. chopped onions
- 1 C. of cheese (feta, parmesan, ricotta)
- Olive oil / grape seed oil to fry
- 1/2 C. bread crumbs (approx.)
- Flour
- 2 eggs
- salt

Preparation
Step 1
Saute onions in some canola. Chop up spinach. Mix in a bowl. Add enough olive oil to lightly coat. Add bread crumbs. Mix in eggs and add salt.
Make cakes and place in hot oil. Flip.
