Banana Pancakes

Ingredients

  • 2 cups flour
  • 2 tsp baking powder
  • 3 tbsp sugar
  • 1/2 tsp salt
  • 2 large eggs
  • 2 tbsp melted butter
  • 1 1/4 cups whole milk
  • 1 1/2 bananas, sliced into 1/4 inch rounds
  • non-stick cooking spray

Step 1

In medium bowl, mix together first 4 ingredients. In a small bowl whisk together milk, egg and butter. Fold the egg mixture into the flour mixture and stir with a fork until just blended; mixture will be slightly lumpy. Fold the banana slices into the batter.

Heat a large skillet over medium heat and spray with Pam. Ladle 1/2 cup batter into pan for each pancake. When air bubbles form and then burst (about 2 minutes), flip the pancake and cook on the other side until golden brown.
