Thanksgiving Pumpkin Pie
- 1 c. brown sugar, firmly packed
- 1/2 tsp. cinnamon
- 1/2 tsp. ground cloves
- 1/4 tsp. ginger
- 3/4 tsp. nutmeg
- 3/4 tsp. salt
- 1 1/2 c. pumpkin, sieved and cooked or canned
- 1 c. milk, scalded
- 3 eggs
Mix brown sugar, spices and salt. Add pumpkin; gradually add scalded milk. Beat 2 egss and 1 egg yolk; add; mix. Beat 1 egg white stiff: fold in.
Pour into 9" unbaked pastry shell. Moisten edge of pastry: decorate with pastry leaves (leaf shaped pieces of pastry 1" long placed overlapping each other on the filling next to the crust edge). Bake in hot oven (450) 10 mins., then in 325 oven about 30 mins. or until mixture doesn't adhere to knife.
