Ingredients
- 3 cups all purpose flour
- 1 cup confectioners sugar
- 1 1/2 cup butter
- 4 egg whites
- 1 1/2 cups white sugar
- 3 Tbsp all purpose flour
- 1 tsp baking powder
- 1/2 cup lemon juice

Preparation
Step 1
Preheat oven to 350 degrees. Grease a 9x13" pan.
In a medium bowl, stir together the 3 cups of flour with confectioners sugar. Cut in the butter with a fork or pastry cutter until mixture resembles coarse crumbs. Press 1/2 of the mixture into the bottom of the prepared pan. Bake for 15 min.
In smaller bowl, stir together egg whites and white sugar. Add flour and baking powder, mix until lumps are gone. Stir in lemon juice. Pour lemon mixture over the baked crust, then sprinkle remaining crust mixture evenly over top. Bake for 20-25 min in preheated oven. Refrigerate to set before serving.
