Grilled Portuguese-stye chicken with mango salsa

Ingredients
- 6-8 chicken thighs, boneless, skinless
- 1 TBSP evoo
- 5 cloves garlic
- 3/4 cup roasted red pepper
- 1/2 onion, chopped roughly
- 1 tsp brown sugar
- 1 tsp paprika
- 1 tsp dried oregano
- 1/2 tsp cayenne pepper
- 1 TBSP lemon juice
- 1 mango, peeled, and diced
- 1/2 red onion, finely chopped
- 1/2 cup cucumber, diced
- 1/2 green pepper, diced
- 1 TBSP lime juice
- 1/2 cup chopped fresh mint
- Lime or lemon wedges, to serve

Preparation
Step 1
Use small sharp knife to make several 5mm deep cuts on thick part of chicken
Marinade: puree garlic, OO, red pepper, onion, b. sugar, paprika, cayenne pepper, oregano and lemon juice in processor or blender til smooth. Season w/ salt and pepper. Coat chicken in marinade, cover and leave to marinate for at least one hour or overnight.
Gently mix mango, red onion, cucumber, mint, green pepper and lime juice in bowl. Season w/ salt and pepper and refrigerate.
Grill on high for 20 mins. turning once til golden. Don't be scared of a little charring.
serve chicken w/ stamed rice, fresh mint and a squeeze of lime, w/ the salsa on the side.
