Ingredients
- 2 lb Meaty Chicken pieces
- 2 Tlbsp. Olive Oil
- 2 large Onions, chopped
- 2 large Carrots, chopped
- 1 cup short-grain rice
- 2 single-serving intstant tomato soup mix
- 3 cups Chicken stock or broth
- 1/4 tsp. Black Pepper
- 1/4 cup fresh Cilantro, chopped
- Salt and Pepper to taste

Step 1
Remove skin from chicken if desired.
Season chicken with salt and pepper. In a large skillet, heat oil over medium-high heat. Add the chicken; cook about 10 minutes, turning frequently, until golden brown. Remove from pan. Add onion and carrot to pan;stir over medium heat 5 minutes or until golden. Add rice and stir over low heat for 5 minutes. Combine tomato soup mix, broth and pepper; add to pan. Stir until mixture boils. Return chicken to pan and reduce heat. Simmer, covered for 20 minutes or until chicken is tner, rice is cooked and liquid absorbed. Stir in cilantro. Serve hot.
