Double Tomato Bruschetta

Ingredients

  • 6 roma tomatoes, chopped
  • 1/2 cup sundried tomatoes, packed in oil
  • 3 garlic cloves, minced
  • 1/4 cup olive oil
  • 2 TBS balsamic vinegar
  • 1/4 cup fresh basil
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 french baquette
  • 2 cups mozarella cheese, grated

Preparation

Step 1

Preheat oven on broiler setting.

In large bowl, combine all ingredients except bread and cheese. Allow mixture tp set for 10 minutes.

Cut baquette into 3/4 inch slices. Arrange on cookie sheet, broil 1/2 minutes until slightly toasted.

Divide tomato mixture evenly over bread and top with cheese.

Broil 5 minutes or until cheese is melted.
