Ingredients

  • 3 eggs, separated
  • 1/2 cup sugar
  • 3 Granny Smith apples, peeled, cored and chopped
  • 1 lemon , need all the juice and grated peel
  • 1/4 cup golden raisins
  • 1 tablespoon margarine, melted
  • 1/4 teaspoon cinnamon
  • 3 medium matzo cracker
  • 2 cups hot water, for soaking matzo
  • 1/4 cup margarine, melted
  • 1/2 cup cinnamon sugar, mixture

Preparation

Step 1

1. Beat egg yokes with 1/2 cup sugar until thick.

2. Combine apples, lemon peel and juice from the 1 lemon, raisins,1 tablespoon of melted margarine 1/4 cinnamon. Stir into egg yolk mixture.

3. Soak matzo in hot water until soaked and drain in colander pour into apple mixture. Beat egg whites till stiff and peaks form. Fold into apple mixture.

4. Pour the 1/4 cup melted margarine into a 2 quart baking dish.

5. Spoon apple mixture into the pan. Sprinkle with cinnamon and sugar mixture.

6. Bake at 350 for 45 minutes.
