Ingredients
- 2 heads broccoli, broken into florets
- 2 red bell peppers, thinly sluiced
- 2 cloves garlic, minced
- 1 1/2 C milk
- 1 C grated cheddar, sharp
- 3 T flour
- 3 T butter
- 2 T olive oil
- pinch nutmeg
- s & p

Preparation
Step 1
Preheat oven to 400 degrees; grease baking dish.
Steam broccoli for 4-6 minutes; put in ice water to stop cooking.
Heat oil; saute bell pepper for 5-7 minutes. Add garlic and saute for 1 more minute. Mix in broccoli; season with s & p and toss.
Pour into baking dish. Sprinkle with half of the cheese.
Melt butter in small pan; add flour and cook roux for 1-2 minutes. Stir milk and nutmeg into roux. Cook till sauce is thick, about 10 minutes.
Pour roux over vegetables; top with remaining cheese. Bake 15-20 minutes.
