Ingredients

  • 1 LB fresh salmon (may use cod, talapia or orange roughy)
  • 1/2 cup lemon juice
  • 1/4 cup finely chopped onion or shallots
  • 3 Tablespoons olive oil
  • 2 Tablespoons snipped fresh dill
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 flour tortillas
  • 2 cups shredded lettuce
  • Garlic Lemon Mayo: stir together 1/3 cup mayonnaise, 2 Tablespoon finely chopped green onion, 1 TBLS snipped fresh dill, 1/2 teaspoon shredded lemon peel and 1 clove garlic, minced

Step 1

1. Thaw fish. Rinse, pat dry. Place fish in plastic bag.
2. Marinade in frig 1 hour:
In small bowl combine lemon juice, onion, oil, dill, garlic, salt & pepper.
(reserve marinade for basting while grilling)
3. Grill fish on well gresed grill rack directly over medium coal 4-6 mins per thickness, until fish flakes easily.
4. Transfer to cutting board, flake into bite-size pieces.
5. Spread Garlic-Lemon Mayonnaise onto tortilla. Top with lettuce & salmon.
