Dorothy's Noodle Recipe

Dorothy is a dear friend from church. She is a marvelous cook and has taken the time to teach my daughter and I some of her years-in-the-making secrets. This is one of them.
Ingredients
- 6 large eggs (about 1 1/2 to 1 3/4 C)
- 2 tsp. salt
- 1/2 C water
- 2 1/2 T. vegetable oil
- 1 tsp. yellow food coloring (optional)

She did not give any written directions with this. Her methods reflect a highly skilled cook and she barely uses measurements. I do know that "a bunch of flour is put into the middle of a bowl where a "well" is made in the middle of the flour. the eggs are broken and mixed with the water, salt and oil (and food coloring). All are mixed together to make a dough that is dry and stiff.
The dough is rolled out very very thinly on a very well floured surface and then cut into small pieces. The noodles are then left to dry out until they are hard and crispy (usually over night or at least 5-6 hours.
Be sure to store them in the freezer.
