- 1-2 eggplant depending on the size
- Provolone cheese(1-2 packages)
- Bread crumbs
- Olive oil
Peel eggplant and slice. Eggplant should be cut in circles.
Combine flour and breadcrumbs In one bowl. Eggs and milk in another.
Dip eggplant into the flour mixture and then into the milk mixture.
Fry each piece until slightly brown.
Once eggplant is all fried, put sauce on the bottom of a 9X13 baking dish. Layer with eggplant...put cheese on top of eggplant, add sauce and continue to repeat the process until you've used all the eggplant.
Bake at 350 for 45 minutes, covered.
