Ingredients

  • 3 to 4 pound center cut prime rib roast
  • 8 fresh large garlic cloves
  • Fresh ground pepper
  • 1/2 teaspoon white salt
  • 1/2 cup dry wine
  • 2 cups beef stock

Preparation

Step 1

1. Using a knife poke holes all over uncooked prime rib roast and insert garlic cloves
2. cover roast and refrigerate overnight.
3. Next day remove the roast and uncover and let it get to room temperature about 4 hours. Very important step to relax meat fibers.
4. Set oven to 450 and allow to preheat for 15 minutes once it reaches temperature.
5.Season the roast with small amount of salt buts lots of ground black pepper.
6. Place the roast fat side up on a rack in a shallow pan, then insert thermometer in the middle of the roast but not touching bones.
7. Roast uncovered at 450 for 20 minutes.
8, After 20 minutes reduce oven to 350 and continue to roast for 1 hour to 1 hour 15 minutes or until meat thermometer reaches 130 for rare 140 for medium rare, prime rib is usually served medium rare.Check roast after an hour.9. Remove roast to a cutting board . Cover loosely with foil and allow to rest.
9. While roast is resting prepare the au jus: place the roasting pan on top of stove over high heat and wine and beef broth mix the drippings in and reduce by half. Will take 20 minutes.
10. Add salt and pepper to taste.
11. Slice roast and drizzle with some of the au jus.
