Ingredients
- 1 pound fettuccine
- 1 pkg (9 oz) frozen peas, thawed
- 1 tbsp canola oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 4 tsp Cajun seasoning
- 1 pound peeled and cooked frozen shrimp, thawed
- 2 1/2 tbsp unsalted butter
- 3 tbsp flour
- 1 cup vegetable broth
- 1 cup milk
- 1 cup shredded Gruyere cheese

Preparation
Step 1
Cook pasta following pkg directions, about 12 min. Add peas to pasta water for last 2 min of cook time. Drain & return to pot.
Meanwhile, heat oil in a large nonstick skilled over medium heat. Cook onion & garlic for 3 min. Stir in 2 tsp Cajum seasoning; cook 1 min. Stir in shrimp; copok 2 min. Set aside.
Melt butter in medium saucepan over medium heat. Whick in flour and cook, whisking for 1-2 min. Slowly whick in broth & milk. bring to a simmer; cook 3 min. Stir in remaining 2 tsp Cajun seasoning and Gruyere until smooth. Pour into pasta pot along with shrimp mixture. Toss to coat; serve
