Ingredients

- nonstick spray
- 1 cup flour
- 1 cup yellow cornmeal
- 1/4 cup plus 2 tbsp sugar
- 1 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 cup buttermilk
- 1 egg, beaten
- 1/4 cup safflower oil
- add 2 tbsp caramelized onion
- and 1 1/2 strips cooked bacon, crumbled.

Preparation
Step 1
Preheat oven to 375. Lightly spray a mini muffin tin. Whisk together flour, cornmeal, sugar, baking powder, baking soda, and salt.
Combine buttermilk, egg and oil. Stir wet mix into flour mix until combined. Divide batter if using different flavors.
Fill cups of muffin tins 3/4 full. Bake until tops are golden, 12 minutes. Transfer to a wire rack and let cool for 5 minutes. Repeat with remaining batter. Serve warm or room temp.
