Spicy Tomato Sauce with Pancetta

  • 1 tsp olive oil
  • 4 oz pancetta, sliced 1/8 inch thick and cut into strips
  • 1 red onion, chopped
  • 1/2 tsp red pepper flakes
  • 1 can (28 oz) peeled plum tomatoes, chopped
  • 1/2 tsp salt

Step 1

Heat oil in a heavy medium pot over medium. Cook pancetta, stirring often, until golden, 8 minutes. Add onion and red pepper flakes, and cook until tender while stirring, 10-12 minutes. Stir in chopped tomatoes and juice, and add salt.
