Cheesy Ham and Potato Casserole

Ingredients

  • 2 T chopped onion
  • 1/4 c butter or margarine
  • 1/4 c flour
  • 1 tsp salt
  • 1/2 tsp dry mustard
  • dash pepper
  • 1 1/2 c milk
  • 2 cups ( 8oz) shredded cheddar cheese, divided
  • 2 cups cubed cooked ham
  • 6 cups cubed cooked potatoes
  • Topping
  • 2 T butter in 1 cup measure.
  • Microwave 1 min on med high. Stir in 1/4 cup dry italian bread crumbs. Sprinkle on top when almost finished cooking. Cook approx 10 min longer.

Preparation

Step 1

Saute onion in butter in a large saucepan until tender. Add flour and seasonings, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk, cook over medium heat, stirring constantly, until thickened and bubbly. Add 1 1/2 cups cheese, stirring until cheese melts. Add ham and potatoes, tossing gently. Spoon into greased 2 quart shallow baking dish, bake, uncovered at 350 for 25 minutes. Sprinkle with remaining 1/2 cup cheese, bake an additional 5 minutes.
