Scallops - Parmesan Breaded

Ingredients
- Coating:
- 20 large sea scallops (about 1 1/4 lbs)
- 2 T. olive oil
- 1/2 cup Italian style bread crumbs
- 1/4 cup parmigian-reggiano cheese, grated
- 1/2 tsp kosher salt
- 1/2 tsp ground pepper
- Garnish:
- 1/2 cup Italian parsely, chopped
- 2 T. lemon zest
- 1 T. olive oil
- 1 tsp. lemon juice
- Lemon wedges

Step 1
Coating:
Combine ingredients on plate.
Wash scallops and pat dry with paper towel, place in small bowl. Add olive oil and coat. Dip scallops in coating turning to cover evenly. Gently press the crumbs onto the scallops. Place scallops in single layer on clean platter. Cover with plastic wrap and refrigerate for 30 minutes to set the breadcrumbs.
Garnish:
Mix all ingredients and set aside.
Brush or spray the scallops with olive oil. Place on grill 1-2" apart and grill over direct high heat until just opaque in center, 4-6 minutes turning once halfway through. Remove from grill and sprinkle with garnish. Serve warm with lemon wedges.
