Ingredients

  • 2 Tablespoons olive oil
  • 1/3 cup thin sliced celery
  • 1/3 cup finely chopped green bell pepper
  • 1/3 cup sliced green onions
  • 12 ounce chopped ham
  • 3 cups water
  • 6 chicken bouillon cubes
  • 1 cup thin sliced carrots
  • 3 1/2 cups thin sliced or diced potatoes
  • salt and pepper to taste
  • 5 Tablespoons butter
  • 5 Tablespoons sifted flour
  • 2 cups whole milk

Preparation

Step 1

Heat the olive oil at medium high. Saute the green pepper, green onions, and celery at medium heat. Add the ham and cook thoroughly. Place above items in stockpot. Add water, bouillon cubes, potatoes, carrots, and seasonings. Bring to a boil, then reduce heat to simmer, cover, and cook until potatoes are soft, about 30 minutes. In a saucepan, at medium heat, melt the butter. Gradually stir in the flour and cook until mixture is lump-free and foamy. Gradually add the milk, whisking the mixture. Increase heat to medium-high, and cook until sauce is thickened. Add sauce to soup, and cook until heated through, about 10 minutes.
