Prickly Pear Jelly

- 4 c. prickly pear cactus juice
- 1/2 c. lemon juice
- 1 1/2 pkg. Pectin
- 6 c. sugar
- 1/2 tsp. salt
- 1 tsp. oleo (to reduce foaming)
Place juice, pectin, salt & lemon juice in large pot. Bring to a rolling boil, add sugar. Again bring to a rolling boil. Boil 3 minutes, skim off film & fill jars.
*Half of a 1.75 oz. box of pectin equals 2 T. plus 2 1/2 tsp.
