Turkey Tenderloins with Papaya Salsa

Ingredients
- 1 1/4 cups diced peeled papaya
- 1/2 cup diced red onion
- 1/2 cup halved cherry tomatoes
- 2 tablespoons chopped fresh cilantro
- 1 teaspoon grated lime rind
- 1 1/2 tablespoons fresh lime juice
- 1 teaspoon grated peeled fresh ginger
- 1/4 cup raspberry or white wine vinegar
- 2 tablespoons fresh lime juice
- 1 1/2 tablespoons Dijon mustard
- 1 tablespoon chopped fresh rosemary
- OR
- 1 teaspoon dried rosemary
- 1 tablespoon minced fresh thyme
- OR
- 1 teaspoon dried thyme
- 2 teaspoons olive oil
- 2 (1/2-pound) turkey tenderloins
- Cooking spray

Step 1
Combine first 7 ingredients in a bowl; toss well. Cover and chill.
Combine vinegar and next 6 ingredients (vinegar through turkey) in a large zip-top plastic bag; seal, and marinate in refrigerator 30 minutes. Remove turkey from bag, reserving the marinade. Place turkey on a broiler pan coated with cooking spray; broil 10 minutes on each side or until turkey is done, basting frequently with marinade. Cut tenderloins into thin slices, and serve with papaya salsa.
Serving Size: 3 ounces turkey and 1/2 cup salsa
