Jalapeno Cheddar Fried Potatoes

Ingredients
- 1 lb red potatoes cut into 1 1/2 inch pieces
- 2 Tbsp Vegetable oil
- 1/4 cup scallions, chopped
- 1 jalapeno, sliced
- Salt and pepper to taste
- 1/2 cup white Cheddar, shredded

Preparation
Step 1
Cook potatoes in a saucepan of salted water for 10 minutes; drain. Heat oil in a large cast iron skillet over medium high heat. Fry potatoes in oil until browned, about 5 minutes. Add scallions and jalapeno and saute until jalapeno is tender, then season with salt and pepper. Off heat, sprinkle with cheese.
