Ingredients
- butter flavored non-stick spray
- 1 egg
- 1 cup flour
- 1/2 cup low-fat milk
- 2 tsp. vegetable oil
- 2/3 cup each: raspberries, blackberries, and blueberries
- 1 TBS. sugar
- confectioners sugar for sprinkling
- wax paper

Preparation
Step 1
Crepes:
coat 6 in. crepe pan with spray
beat egg
gradually blend in flour, milk, and oil until creamy
use milk to adjust consistency
cover and let stand for 30 min.
meanwhile sugar berries
pour just enough batter into pan to coat bottom, tilting to spread
cook over medium heat until crepe loosens from pan and lightly browns
flip and cook other side
remove and place between layers of wax paper
continue until you have 8 crepes
place 2 TBS. of berries on light side of crepe and fold sides inward
sprinkle with confectioners sugar and serve immediately
