Beef satay with spicy peanut sauce

Ingredients
- 1/2 medium onion, chopped
- 3 garlic cloves
- 1 Tbsp. ginger, minced
- 1 Tbsp. fresh lemongrass
- 1 Tbsp. granulated sugar
- 2 tsp. red chili paste
- 1 tsp. ground coriander
- 1/2 cup reduced sodium soy sauce
- 2 tbsp. sesame oil
- 1 tbsp fresh lemon juice
- 1 1/2 lbs beef sirloin, trimmed and cut into 3 1/2 inch strips
- Spicy Peanut Sauce
- 1 Tbsp peanut oil
- 1 medium onion
- 1 tbsp minced garlic
- 1/4 tsp red curry paste
- 1/2 c. chunky peanut butter
- 1/4 c. unsweetened coconut milk
- 1 1/2 tbsp. rice vinegar
- 1 tbsp light brown sugar
- 1/2 c. roasted peanuts chopped

Preparation
Step 1
Heat peanut oil in a medium nonstick skillet over medium heat. Add the onion and garlic and cook stirring occasionally until softened, about 3 minutes. Stir in red curry paste and cook 1 minute more.
Add peanut butter, coconut milk, vinegar, brown sugar and 1/2 c. warm water. Stir until smooth and cook for 2 mins or until peanut butter dissolves.
Pour peanut butter mixture, 1/4 cup water and 2 tbsp of chopped peanuts into a blender. Pulse until smooth adding more water if necessary.
Let sauce cool at least 1 hr before serving. When ready to serve, pour sauce into a dip cup and garnish with remaining peanuts.
