Fettucini Alfredo (Lower Calorie Version)
- 1 lb uncooked fettuccine
- 1 tbsp butter
- 1 clove garlic, minced
- 1 tbsp flour
- 3/4 cup 2% milk
- 3/4 cup half and half
- pinch of ground nutmeg
- 3/4 lb medium sized cooked shrimp
- 3/4 cup grated fresh Parmesan
- salt and pepper.
Salt water, boil and cook noodles until al dente. reserve 1/4 cup of cooking water. Drain pasta.
Melt butter in a large skillet over medium heat. Add garlic and cook until it begins to brown - less than 1 minute. Stir in flour. Gradually add milk and half and half, stirring with a wire shisk until blended. Toss in nutmeg. Cook 8 minutes, stirring often until mixture is thickened and bubbly. add shrimp and cheese and whish until well blended. redice heat and season with salt and pepper. If the sauce is too thick, thin with pasta water. Add pasta and serve.
