Apricot Chicken

  • 1/2 cup apricot preserves
  • 1 tablespoon lemon juice
  • 1 teaspoon chopped fresh sage or thyme
  • 1 clove garlic, minced
  • 4 small skinless bonless chicken breast halves


Servings 4


Step 1

Preheat broiler. In a small microwave safe bowl, combine the preserves, juice, sage/thyme and garlic.

Microwave for 15 seconds and stir until well combined. Set aside 1/2 of the sauce to serve at the table.

Coast baking dish with cooking spray. Put chicken in the dish and brush with sauce. Broil for 6 minutes

Turn chicken and bruch with more sauce. Broil another 6 or so minutes until the chicken is cooked through.

Serve with the reserved sauce.
