This tangy, herby glaze dresses up chicken breasts.
- 1/2 cup unsweetened apricot preserves
- 1 tablespoon lemon juice
- 1 teaspoon chopped fresh sage or thyme
- 1 clove garlic, minced
- 4 small skinless, boneless chicken breast halves
Preheat the broiler. In a small microwave-safe bowl, combine theapricot preserves,lemon juice, chopped sage or thyme and garlic. Microwave for 15 seconds, and stir until well-combined. Set aside half the sauce to serve at the table.
Coat a baking dish with cooking
spray. Place the breast halves in the baking dish and brush with some of the apricot sauce. Broil for 6 minutes. Turn the chicken and brush with more apricot sauce. Return to the broiler until chicken is cooked through, about 6 more minutes. Serve with the reserved apricot sauce
