Garlic Roasted Chicken

Ingredients

  • 2 tbsp olive oil
  • 4 boneless chicken breasts
  • salt and pepper
  • 2 heads garlic
  • 4 tsp rosemary
  • 4 slices thick bread, toasted
  • 2 tbsp white vinegar

Step 1

Preheat oven to 425. Heat olive oil in large skillet over medium. Season chicken with salt and pepper, cook until browned, 5 minutes. Separate heads of garlic into cloves. Flip the chicken, add garlic and rosemary and transfer to oven. Roast until chicken is cooked thru, 15-20 more minutes.
Place bread on a platter, top each with a chicken breast. Add vinegar to skillet, scrape up browned bits. Add 3 tbsp water and simmer until sauce thickens. Pour sauce and garlic cloves over chicken and bread.
