Old-Time Lemon Pie

  • 2 1/2 Cups Water
  • 2 Cups Sugar
  • 1 Tbs. Butter
  • 1/2 Cup Cornstarch
  • 6 Tbs. Cold Water
  • 4 Egg Yolks, beaten
  • 4 Tbs. Milk
  • 1 1/2 Lemon Rind
  • 12 Tbs. Lemon Juice
  • 1 Unbaked Pie Shell



Step 1

In a saucepan, combine 2 1/2 cups water, sugar and butter; bring to a boil. Mix cornstarch with 6 Tbs. water. Add to boiled sugar and water until clear. Beat together egg yolks and milk. Add to cornstarch mixture and cook a few minutes longer. Add lemon rind and juice. Cook until thick. Pour into pie shell.
