Macadamia Fish with Nectarine Salsa

Ingredients

  • 2 ea Nectarines, small and firm, pitted and chopped
  • ¼ cup Red bell peppers, finely diced
  • 2 Tbs Green onions, thinly sliced
  • 2 Tbs Lime Juice
  • ½ ea Jalapeño, seeded and finely chopped
  • ¼ tsp Salt
  • ½ cup Macadamia nuts, chopped
  • ¼ tsp Paprika
  • 4 ea Fish filet of choice (6 oz each about 1½ inch thick)

Step 1

Preheat oven to 400°. For salsa, combine nectarines, bell pepper, green onion, jalapeno pepper, salt and lime juice and mix well.

Chop macadamia nuts and combine with paprika and mix well. Arrange fillets on pan. Carefully sprinkle nut mixture on the top of the fillets forming an even layer. Bake 12-15 minutes or until the fish flakes easily with a fork.

Remove fillets from oven and serve with salsa.
